Beefy French Onion Soup
5 onions (about 3.5
lbs), cut in to thick half moon slices
2 tbsp coconut oil or grassfed
ghee
1 pound beef stew meat
5 cups beef stock
2 - 3 sprigs fresh thyme
1 tbsp minced garlic
Salt and pepper to taste
5 cups beef stock

Caramelize onions in pan
with oil. (about 90 mins)

Add beef, stock, thyme,
garlic, salt and pepper to crockpot. Cook on low while onions are caramelizing.
3.
Add caramelized onions
to crockpot and simmer until ready to serve.
